Blackstrap molasses is a special type of molasses with a very low glycemic index, making it safe for people with diabetes. It's been used for many centuries as a sweetener, and was a popular trade good in the seventeenth and eighteenth centuries. Blackstrap molasses is actually the by-product of processing cane sugar into table sugar which is released during the third boiling.
